The quintessential Pouilly-Fuissé

The cuvée

As its name suggests, this Pouilly-Fuissé ‘Vieilles Vignes’ is made from the Domaine’s oldest vines, some of which are as old as 85 years. Firmly rooted in their clay-limestone soil, the vines absorb plenty of minerals resulting in a complex wine, with plenty of body and a subtle impression of sweetness.

To enhance the characteristics of the terroir, fermentation is left to occur naturally, on its lees and exclusively in oak barrels, and lasts 11 to 12 months.

Tasting

This Pouilly-Fuissé ‘Vieilles Vignes’ is notable for its bright yellow-gold hue with green highlights. On the nose, it is intense and complex, with intermingling notes of cumin, pear, grilled hazelnuts and white flowers.

The attack is oily and peppery and soon accompanied by notes of apple and candied grapefruit. There is a nice tension on the finish with hints of toast and a touch of pear eau de vie.

recommendation

This wine is best served at 10-12°C and pairs perfectly with white meats in a creamy sauce. Its balance and precision mean that it should develop well in bottle.
